Interesting Tidbits:

San-J founder, San-Jirushi Corporation, was established in 1804 by the Sato family as a Tamari and miso company. The company was founded about three hours southwest of Tokyo in Mie, Japan. This location was chosen for its hot humid summers and chilly winters, which are ideal for Tamari fermentation. At one time, Tamari was brewed with the waters that flow out of the nearby Suzuka mountain range, which is fabled in Japanese folklore for its purity.

San-Jirushi came to the United States in 1978 as an importer to the natural and industrial food markets. Tamari quickly proved itself to be desirable to American tastes and San-J was established to brew Tamari in North America.

Today, family continues to play a vital role at San-J and San-Jirushi. Both companies are still managed by members of the Sato family. Current San-J president, Takashi Sato, is an eighth generation member of the founding family.
